Chicken Sandwich with Avocado Spread Video

An easy avocado spread is a healthy way to add creaminess to your chicken sandwich without high fat mayonnaise. This heart healthy chicken sandwich is packed with protein and healthy fats.
Ingredients
- 2 light whole grain rolls, split
- 4 leaves romaine lettuce
- 1/2 tomato, sliced
- 2 slices red onion
- 2 cooked chicken breasts (3 oz each)
- 1/8 tsp unrefined sea salt
- 1/8 tsp black pepper
- 1/2 ripe avocado, pitted, peeled and mashed
Preparation
- On the bottom half of each roll, layer lettuce, tomato, red onion and chicken. Season chicken with salt and pepper. Spread mashed avocado on top half of roll and place on top of chicken.

Cheese Steak Sandwiches Video
Heart Healthy Recipe
Loaded with lean top round steak and cheese, these low fat Philly cheese steak sandwiches don't need artificial cheese sauce to taste great. These tasty sandwiches are packed with protein too.
Ingredients
- 1 tsp olive oil
- 1 large yellow onion, sliced thin
- 2 tsp finely chopped garlic
- 3/4 lb lean top round steak, sliced very thin
- 1/2 tsp black pepper
- 2 tsp Worcestershire sauce
- 3 slices low fat white American cheese
- 4 whole wheat pita breads (6 1/2-inch diameter)
Preparation
- Preheat oven or toaster oven to 400°.
- In a large skillet, heat oil over medium heat until hot. Add onion and garlic and sauté for 5 minutes, or until onion is softened. Add steak slices and pepper and sauté for 10 minutes, or until browned. Stir in Worcestershire sauce and sauté for 1 minute.
- Turn off heat. Lay cheese slices over steak mixture and cover pan until cheese is melted.
- Cut a quarter off each pita to open the pocket. Fill each pita pocket with one-quater of the steak mixture.
- Place stuffed pitas on an ungreased baking sheet and bake for 2 to 3 minutes, or until pitas are warm. Serve immediately.

Chicken Soup Video

Ingredients
- 2 Tbsp olive oil
- 4 to 5 lb chicken pieces, skin removed
- 1 cup chopped celery
- 1 cup chopped onions
- 5 carrots, cut into 1/2-inch slices
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 Tbsp minced garlic
- 1 tsp sage
- 1 cup frozen corn
- 1 can (28 oz) whole peeled tomatoes, optional
- 2 qts water
- 1 cup cooked yolk free whole wheat egg noodles
Directions
- In a 4-quart Dutch oven or stock pot heat oil over medium high heat until hot.
- Place chicken pieces in pot and sear each side for 1 minute. Add celery, onions, carrots, salt, pepper, garlic, sage, corn, tomatoes (if using) and water and bring to a boil. Cover; reduce heat and simmer for 1 hour and 45 minutes, or until meat falls off the bone.
- Remove soup from heat and let it rest for 15 minutes. Skim off and discard fat from soup. Remove chicken from pot. Cut meat from bones. Return meat to soup. Bring to a boil. Reduce heat to low; simmer uncovered, 10 to 15 minutes or until heated through.
- Add cooked noodles and stir.

- How to Choose an Avocado: Look for firm fruit that has no blemishes. A healthy avocado should feel heavy for its size.
- How to Store Avocados: Keep avocados at room temperature for a few days until ripened. When ripe, the skin will darken, and the fruit will give when you press gently. Refrigerate after ripened.
- How to Cut Avocado: With a large knife, slice avocado in half, around (not through) the pit. If the avocado is very ripe, carefully, but sharply, hit the pit with a knife. Keep knife in the pit, twist the pit, and pull out. If the avocado is not fully ripened, remove the pit with a spoon. Use a spoon to scoop out avocado flesh.

Blueberry and Peach Crisp with Crunchy Topping Video

Ingredients
- 4 medium peaches, peeled and sliced
- 1 cup fresh or frozen blueberries
- 2 Tbsp packed brown sugar
- 2 Tbsp orange juice
- 1 Tbsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup Honey Nut Clusters® cereal, slightly crushed
- 1/3 cup chopped walnuts
Directions
- Preheat oven to 375°. Lightly coat bottom and sides of squarebaking dish (8 x 8 x 2 inches) or rectangular baking dish(11 x 7 x 1 1/2 inches) with nonstick cooking spray.
- Place peaches and blueberries in baking dish. In a small bowl, mixbrown sugar, orange juice, cinnamon and nutmeg. Drizzle mixture over fruit.
- Sprinkle fruit with cereal and walnuts. Bake for 10 to 15 minutes, or until peaches are tender when pierced with a fork. Serve warm or cold.

Mushroom Stuffed Burger Video

This mushroom stuffed burger melds the rich flavors of red wine and mushrooms to make a hearty low fat lunch or dinner recipe. Top the high protein burger with lettuce, tomato and red onion if desired.
Ingredients
- 1/4 cup dried porcini mushrooms
- 1 tsp olive oil
- 2 Tbsp finely chopped onion
- 1/2 cup chopped button mushrooms
- 3 Tbsp red wine
- 1/4 cup fine bread crumbs
- 2 Tbsp chopped fresh parsley
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 lb 93% lean ground beef
Preparation
- Rehydrate porcini mushrooms: In a small saucepan, add porcini mushrooms and just enough boiling water to cover. Let mushrooms rest for 30 minutes. Drain mushrooms.
- Lightly coat a grill rack or broiler pan with nonstick cooking spray and preheat grill or broiler.
- In a medium skillet, heat oil over medium heat until hot. Add onion, button mushrooms and porcini mushrooms and sauté about 2 minutes, or until onion is softened and mushroom juices are released. Add 2 tablespoons of red wine and sauté, scraping up the brown bits until wine evaporates. Add bread crumbs, parsley, salt and pepper and cook until mixture is dry, about 2 minutes.
- Transfer mushroom mixture and 1 tablespoon red wine to a blender and pulse mixture until just blended. In a large bowl, add ground beef, mushroom mixture and pepper to taste. Form mixture into 4 patties.
- Grill burgers (or broil 4 inches from heat), about 8 minutes, turning once, until cooked medium well.????

Preparation
- To choose: At the market, pick up the berries and smell them. They should have a sweet aroma. Check the bottom and around the sides of the container to make sure there are no spoiled berries in the container.
- To store: Take the berries out of the container and line them in a single layer on a plate. Store them in the refrigerator, dry and uncovered.

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat pastry flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1/8 tsp salt
- 1 cup blueberries
- 1 cup low fat plain yogurt
- 1 Tbsp canola or vegetable oil
- 1 Tbsp sugar mixed with a dash of cinnamon
- 1/2 cup sliced almonds or other nuts
Directions
- Preheat oven to 375°. Lightly coat a baking sheet with nonstick cooking spray. In a bowl, combine flours, sugar, baking powder and salt and mix thoroughly. Add berries. In a small bowl, combine yogurt and oil. Add yogurt mixture to dry ingredients.
- Stir gently to form a soft, sticky dough. Turn the dough out onto a floured surface. Pat the dough into a 1/2-inch-thick round. Sprinkle cinnamon-sugar and almonds on top of dough, pressing gently into the dough. With a sharp knife, cut the dough into 8 wedges and arrange on prepared baking sheet. Bake the scones until brown and firm, about 25 minutes.

This cheese cake is a delicious low calorie dessert. The secret cheese cake ingredient is whipped tofu--a creamy substitute for cream cheese. Add berries and for about 200 calories you have a yummy treat.
Ingredients
- 1 cup strawberries
- 1 block (12.3 oz) silken tofu
- 1/3 cup light vanilla soy milk
- 2 tsp vanilla extract
- 1/2 cup sugar
- 2 Tbsp Splenda
- 1 low fat graham cracker crust
- 1/2 cup blueberries
Preparation
- Preheat oven to 375°.
- Chop 1/2 cup of the strawberries. In a blender, combine tofu, soy milk, vanilla, chopped strawberries, sugar and Splenda until well blended; do not over blend.
- Pour mixture into graham cracker crust. Bake for 25 to 35 minutes, or until the top appears cooked.
- Slice remaining 1/2 cup strawberries. Arrange blueberries and sliced strawberries in design of your choice.
- Refrigerate for 1 to 2 hours before serving.
