Blueberry Almond Scones Recipe

The blueberries add sweetness while the almonds add crunch to these low fat classic scones. Try these for breakfast, dessert or even with your afternoon tea.

Ingredients


  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1 cup blueberries
  • 1 cup low fat plain yogurt
  • 1 Tbsp canola or vegetable oil
  • 1 Tbsp sugar mixed with a dash of cinnamon
  • 1/2 cup sliced almonds or other nuts

Directions


  1. Preheat oven to 375°. Lightly coat a baking sheet with nonstick cooking spray. In a bowl, combine flours, sugar, baking powder and salt and mix thoroughly. Add berries. In a small bowl, combine yogurt and oil. Add yogurt mixture to dry ingredients.
  2. Stir gently to form a soft, sticky dough. Turn the dough out onto a floured surface. Pat the dough into a 1/2-inch-thick round. Sprinkle cinnamon-sugar and almonds on top of dough, pressing gently into the dough. With a sharp knife, cut the dough into 8 wedges and arrange on prepared baking sheet. Bake the scones until brown and firm, about 25 minutes.

This cheese cake is a delicious low calorie dessert. The secret cheese cake ingredient is whipped tofu--a creamy substitute for cream cheese. Add berries and for about 200 calories you have a yummy treat.

Ingredients

    • 1 cup strawberries
    • 1 block (12.3 oz) silken tofu
    • 1/3 cup light vanilla soy milk
    • 2 tsp vanilla extract
    • 1/2 cup sugar
    • 2 Tbsp Splenda
    • 1 low fat graham cracker crust
    • 1/2 cup blueberries

Preparation

    • Preheat oven to 375°.
    • Chop 1/2 cup of the strawberries. In a blender, combine tofu, soy milk, vanilla, chopped strawberries, sugar and Splenda until well blended; do not over blend.
    • Pour mixture into graham cracker crust. Bake for 25 to 35 minutes, or until the top appears cooked.
    • Slice remaining 1/2 cup strawberries. Arrange blueberries and sliced strawberries in design of your choice.
    • Refrigerate for 1 to 2 hours before serving.

PARAPROSDOKIAN:

A figure of speech in which the latter part of a sentence or phrase is surprising or unexpected, frequently used in a humorous situation. "Where there's a will, I want to be in it," is a type of paraprosdokian.


1. Do not argue with an idiot. He will drag you down to his level and beat you with experience.

12 Weeks to Weight Loss is a program from About.com. The Program includes Cardio, Nutrition, Strengthening & Flexibility. The log/calendar and Program has been previously provided. If you would like another copy please contact Sarah or you can access the information on the Wellness Blog or Website. Sign-ups are due by August 2 and log/calendars due on October 6 with at least 80% completed (the last week of the program is a make-up week.)

Award:
2 hours of comp time if the requirement is met and the log/calendar is turned into Sarah by October 6.
